Easy Recipes Using Rotisserie Chicken
There’s no question that rotisserie chickens are a busy American’s saving grace. In fact, they’ve become so popular that Costco alone sells approximately 60 million every year. As much as you already love them for dinner alongside a starch and a vegetable, you’re going to love them even more when you realize how many ways you can transform them for use in all kinds of incredible dishes. These recipes are simple, delicious, and quick, and we guarantee they’ll deepen your love for rotisserie chicken even more than you ever thought possible.
Enchiladas: Just a few ingredients and an oven stand between you and this fool-proof meal. Try classic chicken enchiladas if you’re feeling traditional, avocado chicken enchiladas when you’re looking for a twist, or mediterranean chicken enchiladas if you’re yearning for something new. Whatever you choose, it’s an incredibly simple, easy, and tasty dinner that your whole family will love.
Chicken lettuce wraps: P.F. Chang’s may have popularized this dish, but you’re the one who can make it in less than 10 minutes. Using this copycat recipe, you can satisfy that pesky lettuce wrap craving in record breaking time. Just dice up the chicken, add it at the end to heat through, and serve.
Stuffed peppers: Stuffed peppers are fabulous because they’re hard to mess up, and you can stuff them with practically everything but the kitchen sink. Any mixture of rice, veggies, your rotisserie chicken, cheese, and flavorful sauce will result in a delicious meal 99% of the time. Add pesto and parmesan for an Italian twist, buffalo sauce and blue cheese for wing inspired peppers, or diced sweet potatoes, dried cranberries, and goat cheese for a wintry twist.
Chicken fried rice: Faster and healthier than take-out, this fried rice recipe requires only a few ingredients, is ready in 15 minutes, and you probably already have the ingredients waiting for you in your kitchen. Using pre-cooked vegetables will lessen the cooking time even more, and making it with brown rice will up the fiber content.
Chicken and dumplings: For the easiest comfort food recipe of all time, combine 2 cans of cream of chicken soup, 1 ½ cups chicken broth, 1 cup frozen mixed vegetables, and 1-2 pounds of shredded rotisserie chicken in a baking dish. Next, top with store bought biscuits, and bake at 350 degrees until the biscuits are golden. It’s almost too easy, and too delicious to be true...almost.
Chicken Pho Soup: In recent years, Vietnamese pho soup (pronounced “fuh”) has become a true pho-nomenon. Aside from the fact that you can create endless awesome puns using the name, it’s also wonderful because it’s easy and cheap to make at home. This recipe utilizes just a few ingredients, is healthy yet hearty, and is a welcome yet mild change of pace from traditional American flavors.
Quesadillas: This is another recipe that you can either throw together with whatever you have on hand, or choose to get very creative with. Combining salsa, shredded cheese, and chicken, and cooking between two tortillas with a touch of oil on medium heat until crispy will yield a classic quesadilla, but we’re fans of modern takes as well. If you’re feeling adventurous, try a spinach alfredo quesadilla (alfredo sauce + chicken + spinach + mozzarella cheese), or if you’re in the mood to put your chef’s hat on, make a chicken quesadilla with goat cheese, sliced strawberries, and fresh basil. Cut it up into triangles, finish with a drizzle of honey or reduced balsamic, and serve it with a proud smile.
