Palate Pleasing Pairings:
We recently had the opportunity to create an inspired custom winter menu that was paired with some of Michael Shaps’ delicious wines. Michael Shaps wines are produced in small lots from leased vineyards that are grown under the supervision of Michael Shaps and Philip Stafford. His wines were the muse for our menu.
Course 1
Wild mushroom and truffle pot pie paired with 2008 Michael Shaps Chardonnay
Course 2
Seared sea scallop, cauliflower puree, shiitake mushrooms, brown butter, and chive oil paired with 2009 Michael Shaps Viognier
Course 3
Confit chicken and goat cheese ravioli, smoked tomato, and fried leek paired with 2008 Michael Shaps Cabernet Franc
Course 4
Beet risotto, coq au vin, preserved lemon, Parmigiano-Reggiano, and basil oil paired with 2008 Michael Shaps Merlot
Course 5
Smoked beef medallions, maytag blue cheese, toasted walnut, and porcini jus paired with 2009 Michael Shaps Petit Verdot

Raisin D’etre
Flourless chocolate cake, cinnamon plantain chip, and caramel ice cream
